Judge a bakery by its bread before its pastries: a baguette de tradition with a crackling crust and an open, irregular crumb says more than any window display. The baguette champions
In Montmartre, Le Grenier à Pain (Abbesses) won the Grand Prix de la Baguette in 2010 and again in 2015, with bread made from 100% French flour. Near République, Du Pain et des Idées is famous for its pain des amis and its pistachio-griotte escargot, but it only opens Monday to Friday. Mamiche kneads its sourdough by hand in the 9th and 10th and is known for its chocolate babka.
