A great bar here has a short menu of house creations, bartenders who make their own syrups and infusions, and a door policy about seats, not looks. Behind secret doors
The speakeasy is a cliché, but a few do it properly. Candelaria, on rue de Saintonge since 2011, is a five-seat taqueria up front and a cocktail bar behind a hidden door; have the tacos al pastor first. It takes no reservations. Moonshiner pours 1920s-style drinks behind the fridge door of the Da Vito pizzeria on rue Sedaine, to a jazz soundtrack. Cocktails you'll only drink here
Little Red Door, in the Marais, has made The World's 50 Best Bars list nine times with its farm-to-glass cocktails; walk-ins are welcome, and arriving at the 5pm opening is the easy way in. Le Syndicat, near Château d'Eau, mixes only French spirits, with collaborations from well-known chefs. Beer, wine and something to eat

Yves Camdeborde's L'Avant Comptoir du Marché is a standing-only counter of pork tapas and natural wine under the arcades of the Marché Saint-Germain.
