Bistronomy: how Paris eats now
The most talked-about tables are often small bistros with a chef in the open kitchen. Septime, on rue de Charonne, serves carte blanche menus with natural wines: five courses at lunch, seven at dinner, no choices, total trust. Bookings open at 10am for the following three weeks, and they go fast. On the same street, its seafood counter Clamato takes no reservations: come at opening for crab fritters and oysters. The once-in-a-trip tables
Paris still does grandeur better than anywhere. Arpège has cooked only plants since July 2025, with vegetables from Alain Passard's own gardens; lunch is the gentler way in. Epicure at Le Bristol and Le Cinq at the George V fly the palace flag, and La Tour d'Argent, founded in 1582, still serves its famous duck with Notre-Dame in the window.
