Faubourg Daimant, in the 10th, cooks French bistro food without animal products in a marble-and-tile room: mushroom croquettes, tempura radishes, stuffed cabbage, a corn caramel brownie. Soya, on rue de la Pierre Levée in the 11th, is fully organic and vegan, and its Sunday brunch buffet is famous enough that you need to book. Burgers, ramen and street food
On rue de Lancry, Les Tontons Veg makes its burgers in front of you, with house seitan in the Tonton Katsu and panisses on the side. Arpège, in the 7th, is the headline: Alain Passard's three-star restaurant has gone entirely plant-based, with produce from his own gardens. Think beech-smoked potatoes and an apple tart shaped like a bouquet of roses. It's one of our Michelin 3-star restaurants, with prices to match. F.I.E.F., in the 11th, isn't vegan, but its Amour Végétal tasting menu is worth asking about when you book.
