Finding a real traditional French restaurant in Paris

Bouillons: the classics at yesterday's prices
The bouillon was the working Parisian's canteen in the 19th century, and it's back. Bouillon Pigalle seats 300 on two levels a few steps from the Moulin Rouge, with most dishes between €3 and €14: œufs mayonnaise, soupe à l'oignon, magret à l'orange, baba au rhum. Bouillon République is even bigger, with 450 seats, €1 oysters and a demi jarret frites served nonstop from noon to midnight. Both draw crowds, so book or come right at opening. Old dining rooms, serious cooking
Aux Lyonnais has served Lyon's bouchon food since 1890 in a preserved Belle Époque room: quenelle de brochet in Nantua sauce, pâté en croûte, a pink praline tart. Bistrot Paul Bert, in the 11th, is famous for its filet de bœuf au poivre and only takes bookings by phone. Benoit, open since 1912 near the Hôtel de Ville, holds a Michelin star and still serves cassoulet and sole meunière. Up in Belleville, Le Baratin has been cooking bold, offal-friendly French food with natural wine since 1987.
Near the Eiffel Tower, minus the trap
The 7th is where tourist menus multiply, and also where two of our favorites hide. L'Ami Jean is loud, packed and generous, with Basque touches and a legendary riz au lait. Where to look, and what it costs
The 9th, the 2nd and the 11th have the most traditional tables on this list, with the 6th and the 18th close behind. Most are mid-priced, and the bouillons prove you can eat well for little; our affordable restaurants have more. Hungry after midnight?
