How to pick a great terrine in Paris
A terrine is a small test of a whole kitchen. A good one is coarse rather than pasty, seasoned boldly enough to taste cold, and made in-house. Pâté en croûte adds a second exam: crisp pastry, a clean slice, no gap between crust and filling. Every place page lists its must-try dishes, so you can see whether the terrine is the house star or a footnote before you book.

The 9th has the most terrines on this list, followed by the 6th, so the 9th arrondissement is a good place to start. Most places sit in the upper-middle price range. For value, head to the bouillons: Bouillon Chartier in the 9th lists a terrine de campagne among its must-tries, at small prices under an Art Nouveau ceiling.
