Where to eat foie gras in Paris
Foie gras comes two ways. Cold, as a terrine or mi-cuit, it should be smooth, ivory-pink and just firm, served with toasted brioche or country bread and a pinch of salt. Hot, pan-seared, it needs a crisp, caramelized crust around a soft, almost molten center, and something sharp, fruit or a reduction, to cut the richness. At Le Cinq, Christian Le Squer's three-star restaurant in the Four Seasons George V, foie gras comes as small "pebbles". Pierre Gagnaire serves a roasted foie gras on its three-star menu; it's closed on weekends and the first Monday of the month. Southwestern and bistro classics
Foie gras is a Southwestern specialty, and Le Violon d'Ingres, a starred restaurant steps from the Eiffel Tower, pan-sears duck foie gras next to its cassoulet; its lunch menu is the most affordable way in.
