How to find the best oysters in Paris
A good oyster is cold, full of its own seawater and opened just before it reaches you. The shell should be tightly closed until the knife goes in, and the menu should name the origin, Fines de Claire, Isigny or Brittany, rather than just "oysters". Serious places add rye bread, salted butter and a shallot vinegar.
