Palace tables
The 8th's palace hotels hold some of the most celebrated kitchens in France. Le Cinq, at the Four Seasons Hôtel George V, is Christian Le Squer's three-star table; try the truffle spaghetti gratin. Private mansions and big names
Le Clarence, two stars, cooks modern French food with Italian touches in a 19th-century hôtel particulier. Le Taillevent pairs its cooking with a 4,000-bottle cellar and flambéed crêpes Suzette.
